Ricotta Cookies

Makes 6 dozen
Ingredients
- • 2 cup Granulated Sugar
- • 1 cup Margarine or Butter
- • 15 oz Ricotta Cheese
- • 2 tsp Vanilla
- • 2 large Eggs
- • 4 cup All-Purpose Flour
- • 2 tbsp Baking Powder
- • 1 tsp Salt
- • 1.5 cup Confectioners Sugar
- • 3 tbsp Milk
- • Sugar Crystals
Instructions
- 1. Preheat oven to 350 degrees F
- 2. Beat granulated sugar and butter at low speed until blended. Increase speed to high and beat until light and fluffy, about 5 mins
- 3. At medium speed, beat in ricotta, vanilla, and eggs until well combined
- 4. Reduce speed to low, add flour, baking powder, and salt; beat until dough forms
- 5. Drop by level tablespoon, about 2 inches apart onto ungreased cookie sheet
- 6. Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft)
- 7. Remove with spatula to a wire rack to cool and repeat with remaining dough
- 8. When cookies are cool, prepare icing
- 9. In a small bowl, stir confectioners sugar and milk until smooth
- 10. Spread or drizzle onto cookies and sprinkle with sugar crystals
- 11. Set cookies aside to allow icing to dry completely, about an hour
