Makes 6 dozen
Ingredients
- 2 cup Granulated Sugar
- 1 cup Margarine or Butter
- 15 oz Ricotta Cheese
- 2 tsp Vanilla
- 2 large Eggs
- 4 cup All-Purpose Flour
- 2 tbsp Baking Powder
- 1 tsp Salt
- 1.5 cup Confectioners Sugar
- 3 tbsp Milk
- Sugar Crystals
Instructions
- Preheat oven to 350 degrees F
- Beat granulated sugar and butter at low speed until blended. Increase speed to high and beat until light and fluffy, about 5 mins
- At medium speed, beat in ricotta, vanilla, and eggs until well combined
- Reduce speed to low, add flour, baking powder, and salt; beat until dough forms
- Drop by level tablespoon, about 2 inches apart onto ungreased cookie sheet
- Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft)
- Remove with spatula to a wire rack to cool and repeat with remaining dough
- When cookies are cool, prepare icing
- In a small bowl, stir confectioners sugar and milk until smooth
- Spread or drizzle onto cookies and sprinkle with sugar crystals
- Set cookies aside to allow icing to dry completely, about an hour
